I am one of the winners for the Expressions of Hunger Video Contest who will be featured on the front of  Cheerios Boxes, sold exclusively at nationwide ShopRite stores this Fall 2010!

The Expressions of Hunger Video Contest focused on sharing emotions, thoughts and feelings through music, poetry, performance, art and storytelling to enlighten others about hunger in our community.

I am looking forward to my Cheerios photo shoot and I’ll be sure to let you all know when my picture and name are in the cereal aisles!


Keeping in line with my cereal theme of the day, I thought I’d share with you a tasty breakfast idea that is an easy go-to-snack and convenient on-the-go breakfast idea…Enjoy!

Amie’s Homeade ‘Oaties’ Bars

Ingredients

  • 3 cups rolled oats
  • 1 cup rice milk
  • 1 Tbsp. ground flax seed or wheat germ
  • 2 Eggland’s Best egg whites or egg substitute
  • 1/4 cup freshly squeezed orange juice (from a large orange)
  • 1 tsp. orange peel zest
  • 1 tsp. vanilla (gluten free)
  • 2 Tbsp. raw cacao or dark chocolate chips
  • 3 Tbsp. unsweetened applesauce
  • 1/4 tsp. cinnamon
  • Dash of sea salt

Directions

  • Preheat oven to 325°F.
  • Mix all dry ingredients in a bowl and blend well.
  • In a separate bowl, combine rice milk, egg whites, orange juice, vanilla, and applesauce.
  • Combine dry and wet ingredients; mix well.
  • Spread mixture evenly onto a baking sheet lined with parchment paper.
  • Bake until edges are crispy and brown.
  • Cut into bars.

‘Chicky’ Chicken Fingers with Honey Mustard Dipping Sauce

Here’s a great recipe for some guilt-less chicken fingers for all of you chicks watching your figures!

Ingredients

  • 4 boneless chicken breasts
  • 1/2 cup oat bran
  • 1/2 cup wheat germ
  • 2 Tbsp. ground flaxseeds
  • 1/4 cup ground macadamia nuts
  • 1 egg white, lightly whisked
  • 3/4 cup low sodium vegetable broth
  • Dash of cumin
  • 2 Tbsp. dried rosemary
  • Dash of Nu-Salt and pepper

Honey Mustard Dipping Sauce

  • 2 Tbsp. agave nectar
  • 2 Tbsp. grain mustard
  • 2 Tbsp. Greek plain yogurt
  • Dash of balsamic vinegar

Directions

  • Preheat oven to 400 degrees. Prep baking sheet by lining it with parchment paper.
  • Cut chicken breasts into desired sized nugget pieces. Set aside.
  • Combine all dry ingredients in a large Ziploc bag.  Seal the bag tightly and shake well until completely mixed.  This will be used as your coating mixture.
  • In a medium sized bowl, combine the low-sodium vegetable broth and egg white.  Dip each piece of chicken into the broth/egg white mixture, then dip into the coating mixture ensuring each piece is well coated.
  • Place coated chicken pieces on the baking sheet.  When the sheet is full, place into the oven and bake for 15 minutes or until golden brown.
  • While the chicken is cooking in the oven, combine the ingredients for the honey mustard in a small bowl and beat with an electric mixer for 1 minute on medium speed to ensure a ‘whipped’ dip.
  • Serve with homemade honey mustard dipping sauce.
  • Enjoy!

Cherry-Almond Bran Jingle Balls

It’s time to Deck the Halls with these cute little bite-sized jingle balls.  These are incredibly easy to make and are sure to please your guests this holiday season.  Whether it’s at your Hanukkah table, your Christmas feast or your New Year’s Eve bash…be sure to whip up these adorable cherry almond balls, which are packed with fiber and naturally sweetened with dried cherries, unsweetened coconut and almonds.

Ingredients

  • 2 cups bran flake cereal
  • ¾ cup dried cherries
  • ½ cup almonds, toasted
  • 3 Tbsp. honey or agave nectar
  • 2 Tbsp. silken Nasoya Tofu
  • 2 tsp. freshly squeezed orange juice
  • ½ cup unsweetened coconut flakes
  • 1 Tbsp. wheat germ

Directions

  • Place bran cereal, cherries and almonds in a food processor and process until finely chopped. Add honey, tofu and orange juice; pulse until a stiff dough forms.
  • Scoop tablespoon-size portions and shape with greased hands into balls. Roll each ball in coconut and wheat germ.
  • Place on wax paper. Let stand at room temperature for 30 minutes before serving or storing.

My clients and I enjoyed sampling these tasty treats; we snacked on them right out of the cute little bags (which are resealable and easy to toss into your bag for travel).  I decided to use my creativity and introduced the Goji Gourmet cookies to my clients paired with a dollop of Greek yogurt, crumbled atop a fruit and yogurt parfait and used as a crumb topping for my favorite pie and cake recipes.

I love Allison’s unique Goji Gourmet flavors: the combination of Goji berries with almonds and oats is incredibly satisfying and has a nice crunch…the Goji cherry cacao was my favorite, as I loved the raw chocolate taste and dried cherries happen to be my favorite dried fruit.  Goji ginger with walnuts had a nice crunch to them, as well and the touch of ginger was mild, yet added the perfect ‘zing’.   The Goji orange mint with chips were a huge hit with my clients- as it ‘Tasted like mint-chocolate chip ice cream”, they said.

Almond Encrusted Salmon with Homemade Raspberry Salsa

Last night I enjoyed this delicious salmon dish.  The sweet raspberry salsa makes this salmon a perfect summertime meal.

Ingredients

  • 2 Salmon fillets
  • 1/2 cup ground almonds
  • 1 cup raspberries
  • 1/4 cup cilantro, dried
  • 1/4 cup wheat germ
  • 2 eggs
  • 2 tbsp. honey
  • 2 tbsp. lemon juice
  • 1/4 cup red onion, chopped
  • 1/4 cup flax seeds
  • Nu-Salt and pepper, to taste

Directions

For Fish:

  • Pre-heat oven to 425 degrees
  • Grind almonds with wheat germ, flax seeds, Nu-Salt, pepper and dried cilantro together in a food processor
  • Wisk together 2 eggs in a small bowl
  • Dip fish into the egg mixture and then immediately coat in the almond mixture
  • Bake for 15 minutes or until crust is golden brown

For Salsa:

  • Mix together raspberries, red onion, lemon juice, honey and Nu-Salt and pepper.
  • Spread salsa over baked salmon and enjoy!

Agave Zest RAW Brownies

This Raw Brownie recipe is one of my favorites and I have been using it for years to bring to all of my friend’s BBQ’s and dinner parties…so here it is…the long awaited recipe for my special raw brownies.

My special brownies are no longer a secret, ladies and gents…enjoy!

Ingredients

  • 1/4 cup carob powder or cocoa powder
  • 1/4 cup wheat germ
  • 4 Tbsp. agave nectar or honey
  • Dash of vanilla extract
  • Dash of cinnamon
  • Dash of chili powder
  • 1/4 dried cranberries
  • 1/3 cup coconut
  • 1/4 cup sesame seeds
  • Zest of 1 small orange

Directions

  • Line a square pan with wax paper.
  • In a food processor, chop dried cranberries until they are in tiny pieces. Set aside.
  • In a small bowl, combine agave nectar, wheat germ, coconut and carob powder.  Mix well.
  • Add cinnamon, vanilla extract, chili powder. Mix well.
  • Add chopped cranberries, sesame seeds and orange zest.  Mix well.
  • Spoon this brownie mixture into the wax papered square pan.  Flatten surface and spread evenly.
  • Refrigerate for 1 hour. Keep brownies in the fridge until ready to serve.
  • Enjoy!

How do you feel about eating raw foods? I enjoy eating raw as much as possible everyday and I love the way the phytochemicals and antioxidants make me feel—they give me a ton of energy and keep my skin glowing year round!

Nifty Nut Butter Wrap

This is one of my clients’ favorite Go-To Snacks!  Bananas are not just a good source of B vitamins, they are low in sodium and contain Vitamin C and A as well as high levels of Iron and Potassium.  The natural fiber in bananas also contributes to numerous health benefits.  For instance, bananas contain Trypophan, a type of protein that the body converts to Seratonin, a hormone known for making you feel happy and improving your mood!

Aside from the bananas, these tasty wraps include other nutritional powerhouse ingredients such as the proteins in Greek yogurt and Nut Butter, the energy boosters in Honey and the blood sugar stabilizer of Cinnamon.  Each of these ingredients make my Nut Butter Wraps a healthy and delicious snack anytime of the day!

Ingredients

(Makes 1 Serving)

  • 1 Ripe Banana, sliced
  • 1/3 cup Nut Butter (Almond, Peanut, Cashew, etc.)
  • 1 Whole Wheat Tortilla
  • 1 tsp. Orange Juice
  • 1 tsp. Lime Zest
  • 1/4 cup Greek yogurt, plain
  • 1 tsp. Agave Nectar (or Honey)
  • 1 Tbsp. Wheat Germ
  • Sprinkle of Cinnamon

Directions

  • In a small bowl, combine Greek yogurt and nut butter; mix well.
  • Pour lime juice and orange juice over sliced bananas; gently toss.
  • Top tortilla with nut butter mixture; spreading evenly over the tortilla surface, leaving a 1/2 inch border.
  • Arrange banana slices in a single layer on top of the nut butter.
  • Sprinkle evenly with wheat germ and cinnamon.
  • Drizzle with honey.
  • Roll up and enjoy!

You can also enjoy this snack warmed up in the oven for a few minutes for an extra special treat!
