Gluten-Free Sherried Turkey Pretzel Balls

Last night, I picked up ground turkey from the gourmet market on my corner and I couldn’t resist creating a tasty dinner with it…I debated a turkey loaf, turkey mini loaves and turkey balls.  Well, the balls won out and they were amazing.

I crushed a handful of gluten-free pretzels for a unique texture to these balls…I also opted for a touch of sweetness by incorporating the sherry, agave nectar, stevia and dried cranberries.  These turkey balls were a perfect dinner served atop a bed of sauteed vegetables and Greek yogurt dipping sauce.  The best part?  I made just enough to bring the leftovers for my lunch tomorrow…

My philosophy: Cook once, eat twice…can’t beat it!

Ingredients

  • 2 lbs. lean ground turkey
  • 1 cup tomato paste
  • 1 cup cooking sherry
  • 1/2 cup fresh basil, finely chopped
  • 1/2 cup fresh mushrooms, finely chopped
  • 1 Tbsp. agave nectar
  • 1 Eggland’s Best egg white
  • 2 Tbsp. dried cranberries, finely chopped
  • 1/4 cup gluten-free pretzel crumbs, mashed
  • 1/4 tsp. stevia
  • 1 tsp. cinnamon
  • Sea salt and pepper, to taste
  • Organic tomato sauce
  • Nutritional yeast

Directions

  • Pre-heat oven to 350 degrees.
  • In a large bowl, combine all of the above ingredients.  Mix well using hands.
  • Form into ball shapes and place onto a parchment paper lined baking sheet.
  • Bake fin the oven or 30 minutes or until browned and completely cooked.
  • Serve with organic tomato sauce and sprinkle with nutritional yeast.
  • Enjoy!

Zucchini Fries

I love zucchini and I decided to make this delicious veggie into yummy fries!

Ingredients

  • Fresh Zucchini
  • Nu-Salt and pepper
  • Nutritional Yeast
  • Crumbs (from crushed bran crackers, pretzels, cereals, etc.)
  • Vegan Parmesan Cheese
  • Amy’s Organic Tomato Sauce
  • 1 egg

Directions

  • Pre-heat oven to 425 degrees
  • Cut zucchini’s length-wise into 1/2 inch strips
  • Dip zucchini into egg; coat entire piece of zucchini
  • Dip egg coated zucchini strips into crumbs and nutritional yeast mixture
  • Spray baking sheet with cooking spray
  • Place zucchini’s onto baking sheet. Sprinkle with Vegan Parmesan cheese, Nu-Salt, pepper
  • Bake for 20 minutes or 25 minutes for crispy fries
  • Serve with Amy’s Organic pasta sauce
  • Enjoy!

Oat n’ Turkey Burgers

The other night I was making turkey burgers in my kitchen and I glanced over at my “Steel Cut Oats” and thought…hmmm, let’s throw these guys into the recipe and experiment!

Ingredients

  • 1 lb. ground Turkey
  • 1 cup oats
  • 1/3 cup egg whites
  • Eden Organic no salt-added tomatoes
  • Nu-Salt, Pepper
  • 1 tsp. Chili Powder
  • 1 cup finely chopped Vidalia onion
  • 1/3 cup bran crumbs (you can use mashed crackers, pretzels, etc.)
  • Bread of Choice (Buns, Pitas, Wrap,  Flat Bread, Naan)
  • Kale/Collard Greens
  • 1 Fresh Tomato, sliced
  • Cooking Spray
  • Veganaise, Mustard, Ketchup for topping (if desired)

Directions

  • Combine the first 7 ingredients in a bowl and mix well
  • Divide into 6 burgers (1/2 inch thick)
  • Heat grill pan and spray with cooking spray over medium-high heat
  • Add patties and cook for 6 minutes on each side (or until fully cooked)
  • Place each patty on your choice of bread (above) along with slices of fresh tomato, kale, collard greens.
  • Add Veganaise, Mustard, or Ketchup if desired
  • Enjoy!

These delicious burgers turned out to be quite a success and I loved the texture with the oats.  I paired these burgers with a side of my butternut squash fries!

Outrageous Onion Rings

Last night, I decided to get a little creative in my kitchen…I started with a large onion that I recently purchased at the farmer’s market.  Before I knew it, I was creating my very own ‘Healthy’ onion rings.

Ingredients

  • 1 onion
  • 1/2 cup crushed mixed nuts
  • 1 cup crushed ‘coating’ (your choice of the following ‘coatings’: whole wheat pretzels, bran crackers, cornmeal, whole wheat cereal)
  • 2 eggs (beaten)
  • Chili Powder
  • Rosemary
  • Olive Oil

Directions

  • Pre-heat oven to 325 degrees.
  • Grind nuts and your choice of ‘coating’ above.  Place into a small bowl and set aside.
  • Beat 2 eggs in a small bowl and set aside.
  • Slice onion lengthwise into disk-like shapes.
  • Separate onion rings and dip into liquid egg, then into bowl of ‘coating’.  Be sure to coat each onion ring completely with ‘coating’.
  • Place each fully ‘coated’ onion ring onto a baking sheet drizzled with olive oil.
  • Sprinkle chili powder and rosemary atop each onion ring.
  • Bake in the oven for 15-20 minutes, depending on how crispy you would like them.
  • Enjoy!
