Zesty Macadamia Bison Balls

Earlier this week, I met with one of my clients and I decided to introduce her to bison…we purchased freshly ground bison from Whole Foods Market and went back to her apartment to create some tasty bison balls! After scouring her fridge, I came across freshly ground nut butter and opted to add that to the ingredient listneedless to say, I was yearning for a bison ball and decided to whip them up in my little kitchen last night! I used freshly ground macadamia nut butter and a few other fabulous ingredients that I had in my fridge…the result: Amazing.

Moving forward, I will always make a note to add nut butter to my bison balls, hehe…it added the perfect texture and taste…it was beyond delish!  Just be sure the nut butter is softened before you create these balls as the softness of the nut butter combines perfectly with the other ingredients.

Now I can’t wait to try this recipe with other nut butters…almond, peanut, cashew…O My! I’ve got some exciting ideas for other nut butter balls…coming soon!


  • 1/2 lb. ground bison
  • 2 Tbsp. natural macadamia nut butter (softened)
  • 2 tsp. lime zest
  • 2 tsp. lime juice
  • 1/2 tsp. chili powder
  • 1/4 tsp. sea salt
  • 1/4 tsp. ground pepper
  • 1 Tbsp. balsamic vinegar
  • 1/4 cup gluten-free oats
  • 1/2 cup fresh spinach, chopped
  • 2 tsp. fresh cilantro, finely chopped
  • Optional Toppings: Nutritional yeast, salsa, Greek plain yogurt


  • Preheat oven to 350 degrees.
  • In a large bowl, combine all ingredients.  Using hands, mix well until all ingredients are well combined.
  • Spoon bison mixture into balls (or patties) and place onto a baking sheet lined with parchment paper.
  • Place into the oven and bake for 25-30 minutes; flipping the tray after 15 minutes.
  • Remove from oven.  Sprinkle with nutritional yeast.
  • Serve warm with salsa and Greek plain yogurt for dipping.
  • Enjoy!

Organic Avenue Event Review: Raw Food Demo

Last week, I had the pleasure of attending a raw food prep demo, lecture and book signing with Rod Rotondi, raw food chef, thought leader, and entrepreneur.  This event took place downtown at Organic Avenue’s, The Space of Love on the Lower East Side of Manhattan. Organic Avenue serves a delicious live organic vegan experience through an assortment of fresh juices, smoothies, salads, soups, dips, entrees and salads.

Rod is a world traveler, culinary eclectic, and founder of Leaf Organics, along with social activism and award-winning cuisine he is working to, “change the world one bite at a time.”  His signature cuisine wows celebrities, like Woody Harrelson, Mariel Hemingway and Jenny McCarthy, who frequent his Los Angeles Leaf Organics restaurants.

Rod presented topics such as, “how to make a salad into a meal,” and how to transition to a healthier diet that can work in today’s hectic lifestyle. He demonstrated the incremental steps to develop a healthier relationship with food and deliver his promise to keep it simple and easy; after all he is known for making Raw Food for Real People.

Thank you to Organic Avenue for this educational and inspiring evening at the beautiful Space of Love location. For those of you who are not familiar with Organic Avenue, it surely is worth the trip to their locations in Manhattan, as well as their website.  The juices, salads, soups, chocolate, smoothies, dips, entrees and ‘mylks’ looked delish and I am surely going to return soon to taste each of these beautifully crafted raw meals.

I truly enjoyed listening to Ray’s approach to eating raw and learned a few pointers, myself.  Although I personally could not thrive on a raw food diet, many people have found success with this style of eating. I must admit, I love my cooked foods as much as my raw, and could never pass up a warm buckwheat noodle soup with sauteed vegetables and tofu as I had this evening.  I do, however, love my vegetables and I enjoy eating kale, collards, Swiss Chard, snap peas, carrots, zucchini, cucumbers, peppers, daikon radish, nuts and seeds in their raw form.

Exciting news…I just moved into my very own apartment and I am thrilled to have my  own full kitchen! It’s beautiful and incredibly spacious…perfect for my cooking soirées and recipe testing…just in time for the holiday season.


I have eggs on my mind today…Sunny-side-up, poached or scrambled? Or shall we get creative and whip up an omelet or frittata? Eggs are an inexpensive protein-packed food that are rich in vitamin B12, omega-3 fatty acids and folate. Quick and easy to prepare, eggs can be transformed into your breakfast, lunch, snacks or dinner menu! We’ve all heard the stories about eggs having a bad rap over the years, however, contrary to belief, an egg a day may not impact your cholesterol levels. One egg has simply 76 calories…not too shabby.

But if you’re not hopping on the egg-bandwagon anytime soon, have an egg allergy or are Vegan, not to worry because you can substitute ground flax seeds for eggs in baking recipes. Simply add one tablespoon of ground flax seed to 3 tablespoons of water for the equivalent to one egg; allow to stand for a few moments to plump before adding to batter.


Walking into the so-called ‘egg aisle’ of your local food store can seem like a maze with the abundance of varieties stacked onto the overflowing chilled shelves.

Conventional Eggs. Typically from chickens stacked in small cages, which are not fed organic feed and may contain hormones and/or antibiotics.

Brown Eggs. These are usually conventional eggs with a brown colored shell, which has nothing to do with the quality, nutritional value or taste. The shade of the eggshell color simply depends on the breed of the hen.

Organic Eggs. Made from caged hens, however, this variety is antibiotic free and fed organic feed. I personally believe it’s worth purchasing organic eggs over conventional.

Omega-3 Enhanced Eggs. These eggs are fed a diet of fish oils and flax seed, which means you reap the benefits. Compared to regular eggs, this variety can have up to seven times more Omega 3 fatty acids than regular eggs.

Processed Eggs. These eggs are packaged into cartons and may contain preservatives, flavor or color additives. Theses include liquid eggs, liquid egg whites and dried egg whites. What type of eggs do you prefer?

I’ve put together two of my favorite egg creations that you can prepare in no time.

Healthy Blueberry Blintzes



  • 1 egg
  • 4 egg whites
  • ¼ tsp. cinnamon
  • ¼ tsp. vanilla extract
  • 1 tsp. agave nectar or stevia sweetener
  • 2 Tbsp. Greek plain yogurt
  • 2 Tbsp. ground flax seeds
  • ½ cup blueberries


  • In a large bowl, whisk egg, egg whites, cinnamon, vanilla extract and sweetener for 4-5 minutes until mixture becomes airy and fluffy.
  • Spray a skillet with cooking spray; add whipped mixture and cook over medium heat. Cook for 2-3 minutes and flip to the other side to ensure even cooking.
  • When eggs are fully cooked, transfer to serving dishes and top with a dollop of Greek plain yogurt and a sprinkle of ground flax seeds and blueberries in the center.
  • Fold the eggs over the yogurt and fruit.
  • Enjoy.

Harvest Frittata



  • 4 large eggs
  • 4 large egg whites
  • 2 Tbsp. warm water
  • ½ ripe avocado, mashed
  • ½ small red onion, thinly sliced
  • 1 zucchini, shredded
  • 1 yellow squash, shredded
  • 2 tsp. dried basil
  • Pinch of curry powder
  • Sea salt and pepper, to taste


  • In a medium bowl, whisk together eggs, egg whites and water. Set aside.
  • Spray a nonstick skillet with cooking spray, heat over medium heat. Add onion; stir until becomes translucent. Add zucchini and squash shreds; cook for another 3 minutes.
  • Sprinkle with basil, curry powder, sea salt and pepper. Pour the egg mixture over the veggies in the skillet, covering them entirely.
  • Reduce heat to low, cover and let cook until the egg mixture has set around the edges of the pan; approximately 10 minutes. Be cautious not to overcook the egg mixture as it will become tough.
  • Slice the frittata into 8 wedges and serve.
  • Enjoy.

My clients and I enjoyed sampling these tasty treats; we snacked on them right out of the cute little bags (which are resealable and easy to toss into your bag for travel).  I decided to use my creativity and introduced the Goji Gourmet cookies to my clients paired with a dollop of Greek yogurt, crumbled atop a fruit and yogurt parfait and used as a crumb topping for my favorite pie and cake recipes.

I love Allison’s unique Goji Gourmet flavors: the combination of Goji berries with almonds and oats is incredibly satisfying and has a nice crunch…the Goji cherry cacao was my favorite, as I loved the raw chocolate taste and dried cherries happen to be my favorite dried fruit.  Goji ginger with walnuts had a nice crunch to them, as well and the touch of ginger was mild, yet added the perfect ‘zing’.   The Goji orange mint with chips were a huge hit with my clients- as it ‘Tasted like mint-chocolate chip ice cream”, they said.

Product Review: Oikos Organic Greek Yogurt

A big thank you to the folks over at Stonyfield for sending me a wonderful package of Oikos Organic Greek Yogurt coupons and merchandise.  My clients were thrilled to receive these coupons and have already started purchasing Stonyfield’s various other products.


Oikos Organic Greek Yogurt comes in the following flavors:



My clients enjoyed the plain flavor in place of their mayonnaise and sour cream.  The tart flavor of Greek yogurt may take some taste bud adjustments, but overall my clients and I loved using the Plain yogurt in lieu of processed mayonnaise and sour cream.


The vanilla flavor was delicious and my clients and I enjoyed this with our morning cereal and granola.  The vanilla flavor is just right and not too strong; the sweetness is perfect and compliments fruit and cereal quite well.


My clients loved the honey flavor; this was their favorite flavor, by a long shot! They used the honey yogurt in their oatmeal, mixed into their tuna salad with red grapes and as a dip for whole grain crackers and dried fruits such as papaya and pineapple.  My clients and I also used this honey flavor in our baking recipes as well as for cupcake toppings! This honey flavor has a delicious taste and does not taste ‘fake’ or ‘artificial’…the honey yogurt takes the cake and wins for the best flavor!


My clients and I enjoyed tasting the blueberry flavor; it was not our favorite, however, it was quite tasty and complimented our dessert recipes.  We used the blueberry yogurt in our morning muesli and cereal.  We also tested the blueberry flavor in our smoothies and dessert mouse recipes-the result was quite delish, however, we agreed that the blueberry flavor was more suitable and tasty when added to a recipe instead of alone.

Product Review: French Meadow Bakery

Thank you to French Meadow Bakery for sending me a wonderful package of baked good for my clients to sample.  These products are out-of-this world and absolutely delicious.  Be sure to take a look at their website for Organic, Vegan, Gluten-Free, Casein-Free, Lactose-Free, Peanut-Free and Yeast Free products.

We loved the Hemp Bagels—if you have not yet tried these be sure to pick them up and try them—I assure you they will make your taste buds dance!  Hemp is an excellent source of fiber, protein and essential minerals and is certified Low Glycemic.  I was the first to try the Hemp Bagels with a nice spread of Almond Butter for breakfast…O what a treat this was!  Move over oatmeal–this may just become my new staple breakfast!


My clients and I loved tasting the French Meadow Bakery Daily Bread.  This soft, sprouted whole grain bread had a crunchy bite and paired well with our lunch-time sandwiches.


The French Meadow Bakery’s Organic Wheat and Sprouted Grain Tortillas were a huge hit with my clients, as well.  These soft tortillas are made from a blend of wheat flour, sprouted grains and legumes. A perfect, “Yummy” will escape your mouth when you bite into these delicious tortillas.  We wrapped ours with nut butter and dried fruit drizzled with agave nectar for a healthy and sweet after dinner treat!show_image_in_imgtag
