VEGA Vegan Protein Patties and Marx Foods GIVEAWAY

As you all know, I’m a proud VEGA Ambassador and I recently created a tasty recipe and video demo for the VEGA website sharing my vegan protein patties.

Ingredients

  • 1 packet VEGA Sport
  • ¼ cup steel-cut oats, cooked
  • 1 cup black beans, cooked
  • 2 Tbsp. nut butter
  • ¼ cup canned pumpkin
  • 1 Tbsp. raisins
  • 1 tsp. white balsamic vinegar
  • 1 medium ripe banana, sliced
  • Pinch of each sea salt and pepper
  • 2 Tbsp. agave nectar
  • ¼ tsp. smoked paprika
  • 10 walnuts

Directions

  1. Preheat oven to 325 degrees F.  Prepare a baking sheet with parchment paper; set aside.
  2. In a food processor, combine all ingredients; process until smooth.
  3. Using a tablespoon, drop the batter into your hands; mold into patties and place onto the prepared baking sheet.
  4. Bake for 20 minutes or until lightly golden brown and crispy.
  5. Enjoy!

Guess Who’s Gunna Be Featured on the Front of Cheerios Boxes?

Yep, You Guessed it…Me….


I am one of the winners for the Expressions of Hunger Video Contest who will be featured on the front of  Cheerios Boxes, sold exclusively at nationwide ShopRite stores this Fall 2010!

The Expressions of Hunger Video Contest focused on sharing emotions, thoughts and feelings through music, poetry, performance, art and storytelling to enlighten others about hunger in our community.

Keeping in line with my cereal theme of the day, I thought I’d share with you a tasty breakfast idea that is an easy go-to-snack and convenient on-the-go breakfast idea…Enjoy!

Amie’s Homeade ‘Oaties’ Bars

Ingredients

  • 3 cups rolled oats
  • 1 cup rice milk
  • 1 Tbsp. ground flax seed or wheat germ
  • 2 Eggland’s Best egg whites or egg substitute
  • 1/4 cup freshly squeezed orange juice (from a large orange)
  • 1 tsp. orange peel zest
  • 1 tsp. vanilla (gluten free)
  • 2 Tbsp. raw cacao or dark chocolate chips
  • 3 Tbsp. unsweetened applesauce
  • 1/4 tsp. cinnamon
  • Dash of sea salt

Directions

  • Preheat oven to 325°F.
  • Mix all dry ingredients in a bowl and blend well.
  • In a separate bowl, combine rice milk, egg whites, orange juice, vanilla, and applesauce.
  • Combine dry and wet ingredients; mix well.
  • Spread mixture evenly onto a baking sheet lined with parchment paper.
  • Bake until edges are crispy and brown.
  • Cut into bars.




Zesty Macadamia Bison Balls

Earlier this week, I met with one of my clients and I decided to introduce her to bison…we purchased freshly ground bison from Whole Foods Market and went back to her apartment to create some tasty bison balls! After scouring her fridge, I came across freshly ground nut butter and opted to add that to the ingredient listneedless to say, I was yearning for a bison ball and decided to whip them up in my little kitchen last night! I used freshly ground macadamia nut butter and a few other fabulous ingredients that I had in my fridge…the result: Amazing.

Moving forward, I will always make a note to add nut butter to my bison balls, hehe…it added the perfect texture and taste…it was beyond delish!  Just be sure the nut butter is softened before you create these balls as the softness of the nut butter combines perfectly with the other ingredients.

Now I can’t wait to try this recipe with other nut butters…almond, peanut, cashew…O My! I’ve got some exciting ideas for other nut butter balls…coming soon!

Ingredients

  • 1/2 lb. ground bison
  • 2 Tbsp. natural macadamia nut butter (softened)
  • 2 tsp. lime zest
  • 2 tsp. lime juice
  • 1/2 tsp. chili powder
  • 1/4 tsp. sea salt
  • 1/4 tsp. ground pepper
  • 1 Tbsp. balsamic vinegar
  • 1/4 cup gluten-free oats
  • 1/2 cup fresh spinach, chopped
  • 2 tsp. fresh cilantro, finely chopped
  • Optional Toppings: Nutritional yeast, salsa, Greek plain yogurt

Directions

  • Preheat oven to 350 degrees.
  • In a large bowl, combine all ingredients.  Using hands, mix well until all ingredients are well combined.
  • Spoon bison mixture into balls (or patties) and place onto a baking sheet lined with parchment paper.
  • Place into the oven and bake for 25-30 minutes; flipping the tray after 15 minutes.
  • Remove from oven.  Sprinkle with nutritional yeast.
  • Serve warm with salsa and Greek plain yogurt for dipping.
  • Enjoy!

Product Review: Goji Gourmet

A big thank you to my friend, Allison over at Goji Gourmet for sending me a package of their tasty cookies.  I had the delightful opportunity to meet Allison last week to hear about her exciting new business and taste her deliciously-healthy cookies.

My clients and I enjoyed sampling these tasty treats; we snacked on them right out of the cute little bags (which are resealable and easy to toss into your bag for travel).  I decided to use my creativity and introduced the Goji Gourmet cookies to my clients paired with a dollop of Greek yogurt, crumbled atop a fruit and yogurt parfait and used as a crumb topping for my favorite pie and cake recipes.

I love Allison’s unique Goji Gourmet flavors: the combination of Goji berries with almonds and oats is incredibly satisfying and has a nice crunch…the Goji cherry cacao was my favorite, as I loved the raw chocolate taste and dried cherries happen to be my favorite dried fruit.  Goji ginger with walnuts had a nice crunch to them, as well and the touch of ginger was mild, yet added the perfect ‘zing’.   The Goji orange mint with chips were a huge hit with my clients- as it ‘Tasted like mint-chocolate chip ice cream”, they said.

Oat n’ Turkey Burgers

The other night I was making turkey burgers in my kitchen and I glanced over at my “Steel Cut Oats” and thought…hmmm, let’s throw these guys into the recipe and experiment!

Ingredients

  • 1 lb. ground Turkey
  • 1 cup oats
  • 1/3 cup egg whites
  • Eden Organic no salt-added tomatoes
  • Nu-Salt, Pepper
  • 1 tsp. Chili Powder
  • 1 cup finely chopped Vidalia onion
  • 1/3 cup bran crumbs (you can use mashed crackers, pretzels, etc.)
  • Bread of Choice (Buns, Pitas, Wrap,  Flat Bread, Naan)
  • Kale/Collard Greens
  • 1 Fresh Tomato, sliced
  • Cooking Spray
  • Veganaise, Mustard, Ketchup for topping (if desired)

Directions

  • Combine the first 7 ingredients in a bowl and mix well
  • Divide into 6 burgers (1/2 inch thick)
  • Heat grill pan and spray with cooking spray over medium-high heat
  • Add patties and cook for 6 minutes on each side (or until fully cooked)
  • Place each patty on your choice of bread (above) along with slices of fresh tomato, kale, collard greens.
  • Add Veganaise, Mustard, or Ketchup if desired
  • Enjoy!

These delicious burgers turned out to be quite a success and I loved the texture with the oats.  I paired these burgers with a side of my butternut squash fries!

No-Bake Almond Oaty Bars

These bars are quick and easy to make…they are a perfect mid-day snack dipped into Greek yogurt or an after dinner dessert paired with organic soy ice cream.

I love experimenting in my kitchen-I devised this recipe one afternoon when searching through my cabinets for a snack.  When I finally realized I had all of the ingredients needed to make a bar- I simply played around and came up with a masterpiece.  No baking required is a plus, especially in the warm weather…simply pop these bars into the fridge and they’ll be ready in no time.

Ingredients

  • 1 cup Steel Cut Oats
  • 4 Tbsp. Honey
  • 1/2 cup Dried Cherries
  • A dash of Cinnamon
  • 2 Tbsp. Ground Flax Seeds
  • 1/4 cup Slivered Almonds
  • 2 Tbsp. Cashew Butter (or any nut butter of choice)
  • Zest of 1 Orange

Directions

  • Combine all above ingredients and mix well until it forms a sticky, firm consistency
  • Mold mixture in a square 9 x9 pan
  • Refrigerate for 2 hours
  • Cut into bar- like shapes and enjoy!

To store these bars, simply wrap each bar individually in plastic wrap and store in the fridge.  These will keep in the refrigerator for about 1 week.  For longer storage, you can freeze these bars for up to 3 months.

I love making my own bars–it’s so much fun to experiment in the kitchen with healthy ingredients such as seeds, nuts, dried fruits, sweeteners (such as stevia, agave and honey) and a whole grain base (oats, bran, cereal, rice, bulgar, quinoa, etc.)  My list could go on forever–it’s easy to create your very own custom bar…just take a look at what you have in your cabinets and fridge and experiment with new ingredients each time!

No-Bake Peanut Butter Bars

Ingredients

  • 1 cup Peanut Butter
  • 1/4 cup Oats
  • 1 Tbsp. Sesame Seeds
  • 1 cup dried cranberries
  • 2 Tbsp. Organic honey
  • 1 Tsp. Cinnamon

Directions

  • In a large bowl, mix peanut butter, sesame seeds, oats, cinnamon and cranberries until it forms a nice textured consistency.
  • Add honey and mix well.
  • Press mixture into a square shape about 3/4 inch thick in a square pan or on a plate. 
  • Refrigerate for 2 hours.
  • Cut into bars.
  • Enjoy!
