Justin’s Nut Butter Giveaway and Dairy Free Chocolate Mousse

Let’s just say I’m over-the-top about my buddy Justin and his fabulous nut butters…I recently had the pleasure to meet Justin (twice,hehe) last month and tasted all of his incredible nut butters… Not only is Justin an amazing guy and a REAL Person, but his nut butters are out-of-this world.  Seriously, have you ever tried Chocolate Hazelnut Butter? Honey Almond Butter? Maple Almond Butter? Honey Peanut Butter? I didn’t think so…

Sick and tired of your regular ol’ peanut butter and jelly sammie, well go ahead and take my word for it, you can jazz up your sandwich, wraps, crackers, veggies, fruits, ice cream, anything with Justin’s Nut Butters…and the best part? These tasty creations are sold in handy dandy to-go squeezable and portable packets for easy traveling and munching on-the-go.

So, I decided to whip up a tasty dessert last night and use some of my Justin’s Chocolate Hazelnut Butter…yummm….how about a little Chocolate Hazelnut Mousse to take the heat off this summer?   I hope you enjoy my newest indulgence…it’s guilt-free and exceptionally tasty…

Dairy-Free Chocolate Mousse

Ingredients

  • 1 ripe avocado, pitted and peeled
  • 4 Tbsp. Justin’s Chocolate Hazelnut Butter
  • 1 ripe banana
  • 1/3 cup agave nectar
  • 1/3 teaspoon sea salt
  • 2 teaspoons almond extract
  • 1/4 teaspoon chili powder
  • 4 fresh basil leaves
  • Toppings: Lime Zest and Ground Flax Seeds

Directions

  1. In a food processor or blender, combine all ingredients; process until it forms a creamy consistency.
  2. Scoop into serving bowls and garnish with ground flax seeds and lime zest.
  3. Enjoy!

I created this delicious mousse last night…enjoyed a cup (or two, hehe) and then stored the remainder in my freezer for a frozen treat anytime!

Smoked Chickpea Guacamole for Cinco de Mayo

Happy Cinco de Mayo everyone….I’ve created this amazing chick pea guac that will surely knock your socks off and keep your Cinco de Mayo festivities rollin’…

Ingredients

  • 2 avocados, peeled, pitted and cut into chunks
  • 1 cup chickpeas, drained and rinsed
  • 1 Roma tomato, diced
  • 1/3 cup fresh cilantro, chopped
  • 2 scallions, chopped
  • 1/3 cup red onion, chopped
  • 1 Tablespoon lime juice
  • 2 Tablespoons lemon juice
  • 1 teaspoon O California white balsamic vinegar
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon sea salt
  • 1/3 teaspoon pepper
  • 1/4 teaspoon curry powder

Directions

  1. In a large bowl, combine all ingredients; gently toss  until combined.  I preferred to keep the avocado chunks in the guacamole instead of completely mashing them, as this gave the guacamole a beautiful appearance and was easier to eat atop crackers.
  2. Serve with gluten-free crackers, atop a salad, spread onto a sandwich or as a dip with crudites.
  3. Enjoy!

Sweet Beet Hummus

Here’s a tasty spin on the classic hummus platter…I opted to toss in fresh beets for a sweet flavor without the added sugar.  Beets are a wonderful source of folate, potassium, dietary fiber and manganese…This beautiful Beet Hummus is incredibly tasty and pairs well as a dip for crudites, fruits or crackers as well as an amazing spread on sandwiches and bagels.

Ingredients

  • 5 large beets, scrubbed, cooked and cubed
  • 1/2 ripe avocado, peeled, cored and sliced
  • 1/2 cup macadamia nuts
  • 2 Tbsp. lemon juice
  • 2 small cloves garlic, minced
  • 1/4 tsp. white balsamic vinegar
  • 2 Tbsp. fresh cilantro
  • Pinch of sea salt and pepper

Directions

  • Combine all ingredients in a food processor; pulse until smooth.
  • Transfer to a serving dish and enjoy with gluten free crackers, pretzels and crudites.
  • Enjoy!

Last night, I had a bit of time on my hands and decided to once again get creative in my kitchen.  I recently purchased a few beautiful squash blossoms and I was yearning for a guacamole to have in my fridge for the weekend, therefore I decided to make the best of my blossoms and whip up a tasty guac with a pinch of saffron and chili powder to add a nice kick. The end result: Delishhhy.   Let’s just say there isn’t much left as I was tasting it all night long…

Ingredients

  • Pinch of saffron threads
  • 4 ripe avocados, peeled and pitted
  • 3 squash blossoms
  • 2 Tbsp. lime juice
  • 2 Tbsp. lemon juice
  • 1 tsp. lime zest
  • 1/2 cup chopped red onion
  • 1/4 cup chopped fresh parsley
  • 3 cloves garlic
  • 1/2 tsp. chili powder
  • 1/2 tsp. apple cider vinegar
  • Dash of sea salt
  • Dash of pepper

Directions

  • Toast saffron threads in a frying pan.
  • Mash in a mortar and pestle.
  • In a medium sized bowl, mash avocados with saffron and squash blossoms.
  • Fold in remaining ingredients.
  • Serve chilled.
  • Enjoy!

Emmer-Flour Zucchini Cakes

Ingredients

  • 3 large zucchini, grated
  • 1/4 cup red onion, minced
  • 1 garlic clove, minced
  • 2 large eggs, whisked
  • 1/4 avocado, mashed
  • 1 Tbsp. baking powder
  • 4 Tbsp. emmer flour
  • 2 Tbsp. ground flax seeds
  • 1/4 tsp. chili powder
  • Sea Salt and pepper, to taste
  • Topping: Greek plain yogurt

Directions

  • In a large bowl, combine zucchini, onion and garlic.  Add eggs and avocado; mix well.  Slowly add remaining ingredients; mix until combined.
  • Heat a large pan over medium heat with nonstick cooking spray.  Using a ladle, pour batter onto hot pan making a pancake shape. Reduce heat and flip to ensure each side is golden brown and fully cooked.
  • Transfer to a serving platter.  Serve hot.
  • Enjoy and top with a dollop of Greek plain yogurt.

Homemade Morning Facial Scrub

Yesterday being my fabulous birthday, I decided to create a homemade facial scrub to ‘re-live my youth’ in hope of an instant facial glow.  I simply combined a few ingredients  from my pantry and whipped up an incredible scrub that left my face beaming all day.  I suggest using a ripened banana and ripened avocado as the riper the better for this scrub.

So, what are you waiting for? Go ahead and pamper yourself this weekend with this homemade recipe that will surely ignite a rosy complexion.

Ingredients

  • 10 almonds, finely chopped
  • 1 ripened banana, mashed
  • 10 blueberries, mashed
  • 1/3 cup Greek yogurt
  • 1/2 ripe avocado, mashed
  • 3 Tbsp. ground chia seeds

Directions

  • Combine all  ingredients; mix well.
  • Apply scrub to face; rinse with lukewarm water.
  • Enjoy a fresh-faced beautiful glow!

Last night, I got to thinking…its been quite some time since I’ve whipped up a guacamole, so I picked up an avocado at my corner farmer’s market and decided to get creative…how creative? Well, while at the farmer’s market I stumbled upon a fresh batch of sweet snow peas and a beautiful bundle of asparagus…I simply couldn’t resist and I purchased these incredibly fresh veggies to bring home and have a bit of fun creating a new guacamole recipe…after a bit of altering and tasting, I had perfected my new ‘guac’ and this may be the best one yet.  I present to you…my newest guacamole creation…

Ingredients

  • 5 Tbsp. vegetable broth
  • 1 medium onion, coarsely chopped
  • 4 medium cloves garlic, coarsely chopped
  • 2 cups fresh snow peas
  • 1 1/2 cups asparagus, chopped into 1 inch pieces
  • 4 Tbsp. sunflower seeds
  • 1 ripe avocado, peeled, cored and chopped
  • 1 tsp. white balsamic vinegar
  • 4 Tbsp. freshly squeezed lemon juice
  • 3 Tbsp. lemon zest
  • 3 Tbsp. fresh parsley, chopped
  • 1/8 tsp. chili powder
  • 1 tsp. flax seeds
  • Sea salt and pepper, to taste

Directions

  • Heat vegetable broth in a small skillet over medium heat.  Add chopped onion and garlic; saute until onions are translucent.  Add snow peas, asparagus, sunflower seeds, sea salt and pepper; heat for approximately 4 minutes.
  • Transfer snow pea mixture into a blender or food processor.  Add avocado, white balsamic vinegar, lemon juice, lemon rind, chopped parsley, sea salt and chili powder; puree until desired consistency.
  • Serve at room temperature or chilled.
  • Enjoy!
