I am honored to have two of my holiday recipes chosen

by the Chicken of the Sea ‘Mermaid’

to be presented in the Mermaid Memo on the Chicken of the Sea website and holiday newsletter.

I created these dishes with my favorite Chicken of the Sea products…

Salmon and Crab…

Ask anyone and they’ll tell you that I’m a walkin’ Chicken of the Sea brand ambassador…

I enjoy their salmon everyday for lunch and often switch it up for a bit of crab or tuna.  Since Chicken of the Sea products are gluten-free and dairy-free it’s a play-ground of fun for me…

So, I thought…why not test out my favorite products and recipe test for my holiday inspired dishes…

And, two of these dishes were chosen by the Mermaid to be featured at Chicken of the Sea

Asparagus Crab Salad with Almond Mayonnaise

Ingredients

·         2 lbs. asparagus, cut into 1 inch pieces
·         1 cup Chicken of The Sea Premium Crab Meat
·         ¼ cup red onion, chopped
·         2 cups escarole leaves
·         1 cup watercress
·         1/3 tsp. crushed red pepper

Directions

In a large bowl, toss asparagus with Chicken of The Sea Premium Crab Meat, onion, escarole, watercress and crushed red pepper.  Gently toss with almond mayonnaise (recipe below).

Almond Mayonnaise

Ingredients

·         1/3 cup red wine vinegar
·         1 tablespoon honey
·         ¼ cup olive oil
·         1/3 cup cashews
·         1 Tbsp. fresh parsley
·         1/8 tsp. sea salt

Directions

  1. In a blender, combine vinegar and honey on high until well combined
  2. Slowly add olive oil and cashews.
  3. Add sea salt; blend until soft and creamy.

Pomegranate, Salmon and Cranberry Pasta

Ingredients

·         1 lb. penne pasta
·         ½ cup fresh cranberries
·         2 cups water
·         2 Tbsp. honey
·         5 fresh radish, thinly sliced
·         2 Tbsp. fresh oregano leaves, finely chopped
·         1 medium sweet onion, sliced
·         1 can Chicken of The Sea canned salmon
·         2 Tbsp. olive oil
·         2 garlic cloves, minced
·         2 Tbsp. Dijon mustard
·         1 Tbsp. coconut flakes
·         1 teaspoon fresh ginger
·         Sea salt and freshly ground black pepper, to taste

Directions

  1. In a large pot of boiling salted water, cook penne until it is al dente. Drain the pasta and rinse under cold water.  Set aside.
  2. Meanwhile, in a saucepan cook cranberries in water.  Add honey and bring to a boil; cook for 25 minutes. Drain and set aside.
  3. In a large bowl, combine pasta, cranberries, radish, oregano, onion and Chicken of the Sea Salmon.
  4. In a food processor or blender, combine olive oil, garlic, Dijon, coconut flakes and ginger.  Puree until smooth.
  5. Pour dressing over pasta; gently toss to combine.  Add sea salt and pepper, to taste.

Jasmine Green Tea Shrimp and Tillen Farms Giveaway

I was so excited to create this delicious dish, not only because I love cooking with tea, but I used a new fabulous ingredient for this recipe, ghee.  I have entered the Pure Indian Foods Ghee Recipe Contest and thought this would be a delicious dish to incorporate delicious flavors of tea and ghee in a savory shrimp dish that is perfect for a lunch atop your salad or a dinner atop steamed wild rice.

Jasmine Green Tea Shrimp

Ingredients

  • 2 quarts water
  • 1 ounce jasmine green loose tea leaves
  • 1 lbs. large shrimp, peeled and devined
  • 2 Tbsp. Pure Indian Foods Ghee
  • 2 cloves garlic, minced
  • 1 ounce fresh ginger, thinly sliced
  • 1/4 cup fresh basil, finely chopped
  • 1 lb. fresh Rainbow Swiss chard, roughly chopped
  • 1 lb. fresh kale, roughly chopped
  • Sea salt and pepper, to taste
  • 1 Tbsp. black sesame seeds
  • 2 Tbsp. white balsamic vinegar

Directions

  1. In a large stockpot, bring water to a boil.  Add tea and shrimp; cook for 4 minutes or until shrimp are opague.
  2. Remove from heat; set aside to cool.
  3. In a skillet over medium heat, add Pure Indian Foods Ghee, garlic, ginger and basil.  Cook for 1 minute; add Swiss Chard and kale; cook for 3 minutes.
  4. Remove from heat; transfer to a serving dish.  Serve shrimp atop greens, sprinkle with sesame seeds and a drizzle of white balsamic vinegar.
  5. Enjoy!

Gluten-Free n’ Vegan Tomato Sorbet

 

Just in time for some delicious, Jersey tomatoes here is one of my favorite recipes, which I created from my father’s garden back in New Jersey.  This sorbet is a perfect way to enjoy farm-fresh tomatoes bursting with Vitamin C and Lycopene.

Ingredients

  • 10 large tomatoes
  • 16 oz. agave nectar
  • 3 Tbsp. horseradish
  • 2 tsp. chili powder
  • 1 tsp. lime juice
  • 1 tsp. lime zest
  • 2 tsp. hot sauce
  • 1/4 cup fresh cilantro, finely chopped
  • 1/4 cup fresh basil, finely chopped
  • Sea salt and freshly ground white pepper, to taste

Directions

  1. Fill a large pot with water on the stove top, over medium-high heat and bring to a boil.
  2. Blanch tomatoes by submerging them in boiling water, then immediately remove them and place in an ice bath.
  3. Combine all ingredients into a food processor or blender; pulse for 1 minutes or until smooth.
  4. Transfer mixture into an ice cream maker; spin for 35-40 minutes.
  5. Transfer sorbet mixture into a container, covered in the freezer for 2 hours.
  6. Remove from freezer and serve with freshly grilled tofu, fish or chicken.
  7. Enjoy!

So, just because I’m the Healthy Apple, doesn’t mean I’m not a Healthy Kiwi, too…hehe…

Kiwi Cashew Pudding

Here is a kiwi-rific dairy free and gluten free pudding that can be enjoyed for a breakfast porridge, an afternoon snack or an evening dessert without the guilt.  So, next time you’re yearnin for a healthy snack, reach into your fridge for a scoop of my refreshing and chilled Kiwi Cashew Puddin’…

Ingredients

  • 2 cups unsweetened almond milk
  • 3/4 cup unsweetened coconut milk
  • 1/2 cup buckwheat
  • 2 kiwis, peeled and chopped
  • 2 1/2 Tbsp. agave nectar
  • 1/4 teaspoon all-spice
  • 1/4 teaspoon cinnamon
  • Pinch of freshly ground white pepper
  • Pinch of sea salt
  • 1/3 cup cashews

Directions

  • In a small pot over medium heat, combine almond milk and coconut milk; bring to a boil.
  • Slowly add buckwheat; bring to a boil.  Lower heat and simmer for 40 minutes.
  • Stir in kiwi, agave, all-spice, cinnamon, white pepper and sea salt; mix well.  Continue to simmer until buckwheat is cooked.
  • Transfer to a covered bowl and place into the refrigerator for 3-4 hours.
  • Serve with a sprinkle of ground cashews.
  • Enjoy!

Cucumber Almond Gazpacho Sauce

Last night I decided to whip up a cooling gazpacho sauce to take off the nonstop heatwave that we’re feelin’ here in Manhattan…it surely has been a bit too hot to turn on my oven and strike up the stove, so I opted for a fresh gazpacho sauce which I drizzled atop my tilapia dinner.

This sauce was the best idea because I was instantly rejuvenated and felt like  new person after sweating in this sweltering heat all day…So, why not get creative when making a gazpacho sauce and toss in some blanched almonds, agave and balsamic vinegar to add the perfect hint of pure sweetness to my fresh cucumbers and tomatoes.

Ingredients

  • 2 cups cucumbers, coarsely chopped
  • 1 Heirloom tomato, chopped
  • 1 cup scallions, coarsely chopped
  • 3/4 cup fresh cilantro
  • 1/2 cup slivered blanched almonds
  • 3 Tbsp. olive oil
  • 2 Tbsp. balsamic vinegar
  • 1 tsp. agave nectar
  • Pinch of chili powder
  • Pinch of sea salt and white pepper
  • Chives for garnish

Directions

  • In a food processor, combine all ingredients; blend until well combined.
  • Serve atop fresh fish, tofu, salads or any summertime dish.  Garnish with chives.
  • Enjoy!

ow will you use these tasty Garlic Gold products?

Garlic Gold Pasta with Shrimp and Vegetables

Ingredients

  • 6 oz. whole grain pasta
  • 12 oz. raw shrimp
  • 2 large red bell peppers, sliced
  • 1 bunch asparagus
  • 3 Tbsp. Garlic Gold
  • 1 Tbsp. lemon juice
  • 1 Tbsp. Garlic Gold oil
  • 2 cups Greek plain non fat yogurt
  • ¼ cup fresh parsley, chopped
  • Sea salt and pepper, to taste
  • Wheat germ, for topping

Directions

  1. Cook pasta according to package in a large pot of boiling water.  Add shrimp, peppers and asparagus; toss until shrimp are cooked and pasta is al dente; drain.
  2. In a large bowl, combine Garlic gold, lemon juice, Garlic Gold oil, yogurt, parsley, sea salt and pepper with the pasta, shrimp, pepper and asparagus mixture; gently toss to coat.
  3. Serve warm; sprinkle with wheat germ.

Garlic Guacamole

Ingredients

  • 4 Tbsp. Garlic Gold Nuggets
  • 5 ripe avocados, peeled, pitted and mashed
  • 1 Roma tomato, finely chopped
  • 1/3 cup fresh cilantro
  • 2 Tbsp. lime juice
  • ¼ tsp. chili powder
  • 1 tsp. ground flax seeds
  • 1 tsp. sea salt

Directions

  1. In a large bowl, combine all ingredients.  Coarsely mash until well combined.
  2. Transfer to serving dishes.  Serve chilled with whole grain chips and crudites.

Garlic Grilled Flank Steak

Ingredients

  • 2 Tbsp. Garlic Gold Sea Salt Nuggets
  • 2 tsp. Garlic Gold oil
  • 2 lb. flank steak
  • 10 grape tomatoes, chopped
  • 1 green bell pepper, chopped
  • 1/3 cup red onion, chopped
  • ¼ cup fresh cilantro, chopped
  • 2 Tbsp. balsamic vinegar
  • 1 tsp. freshly ground white pepper

Directions

  1. Preheat grill to high heat.
  2. Combine Garlic Gold Sea Salt Nuggets and Garlic Gold Oil together in a small bowl.  Rub mixture onto flank steak to coat both sides.
  3. In a separate bowl, combine tomatoes, pepper, red onion, cilantro, vinegar and pepper; mix well.
  4. Reduce heat to medium; grill steak for 5 minutes per side or until desired doneness.  Transfer to a cutting board; let sit for 5 minutes.
  5. Slice steak across the grain into thin pieces; serve with tomato mixture.

Parmesan Garlic Green Beans

Ingredients

Directions

  1. Bring a large pot of water to a boil and prepare a bowl of ice to blanch beans on the counter.
  2. When water is boiling, add beans; cook for 5 minutes (blanch) until bright green.  Quickly transfer beans to the ice bowl; blot dry and transfer to a dry dish.
  3. In a large skillet over medium heat, add Garlic Gold Oil, Garlic Gold Parmesan Nuggets, parsley, coriander, sea salt and pepper; mix well for 2-4 minutes.
  4. Serve warm.

Garlic Herbed Toasts

Ingredients

Directions

  1. Toast or grill each slice of bread.
  2. Rub one side of each toasted bread slice with Garlic Gold Oil, sprinkle with Garlic Gold Italian Herb Nuggets.  Place sliced tomato slices atop each slice and sprinkle with sea salt and pepper.
  3. Serve.
